I brew beer so I am after the affects of Air and CO2?

posted on February 6, 2010 in how to brew beer

When the beer is fermenting CO2 is given off and protects the beer from oxydizing. My question is to a chemical engineer. If I introduce into a container 50% air and 50% CO2 would the CO2 sink to the bottom or would air/oxygen come in contact with the bottom of the container. In my case that would be the surface of the beer causing oxydizing.

If I introduce into a container 50% air and 50% CO2 would the CO2 sink to the bottom ? The answer is NO. The gases mix by diffusion, in the same way you don’t suffocate if you lay on the floor at sea level as the denser CO2 doesn’t sink and separate out.
