    @makebeer I am going by what is says on the actual product: Coopers Brewing Sugar (1kg) contains sucrose and maltodextrin. The sucrose will ferment out completely. The maltodextrin is not fermentable and remains in the brew adding to the body and head retention whilst not imparting any sweetness or flavours. A simple improvement to all your brews.

    The Coopers Brewing sugar contains dextrose and maltodextrine. The cidery/green apple flavour is probably an indication of a young beer. After about 2-3 months in bottle, that flavour should be gone.

    A few people had mentioned a poor seal around the lid. It says in the instructions that come with it that if that’s the case, to use a food safe lubricant around the O ring and airlock. You could use a KY product in that case. This issue dos not affect the beer at all, only the airlock action. Watch my airlocks 101 video for more info on that. Optionally, check the links in the “more info” section for other supplies.

    Remove the airlock. It won’t hurt your beer. Put it back as soon as you’re done. Bottle if it’s ready.

    I am not sure why they do, probably to save money, as it is the cheapest sugar available. I’d recommend using dry malt from now on, you will definitely be pleased with the results.

    Did you use that Cooper’s Brewing Sugar that came with the kit? The cidery taste would be caused by that, as the brewing sugar they give consists of 75% sucrose. Sucrose can give a cidery/green apple flavour in beer.

    They recommend low 20’s because it makes a better tasting beer. If you go too high, you end up with sparkling pond water. :) Yeast generate more esters (fruity tasting compounds) and fusel alcohols(gives you headaches) at higher temperatures. Hope that helps.

    I can’t advise on this. Your assessment of your own water is essential. The rule is that if your water is fit for drinking, it’s fit for brewing. Maybe a water filtration system is not a bad idea in any city.

    i noticed you use your tap water for the brew. i was just wondering if its advisable to do this if you dont really trust the cleanliness of your tap water. personally, i live in an old apartment building and i think the water pipes are pretty rusty, ive had brown water (not the runs) run through the faucet before.

    should i use bottled water or is this not a big deal? thanks!

    I just started my first coopers brew a couple days ago, thanks to your recommendations. So far so good.
    I am wondering why the pro home brewers talk about fermenting with much lower temps, like 20 degrees cooler than coopers says to ferment at. Is it about coopers yeast or the concentrate? I don’t understand why such a difference in temp. By the way, thanks for all your vids.
